Europe’s love affair with chocolate can be traced back to Christopher Columbus who brought cocoa beans back to Spain from the Americas in 1502. Sally will take us through some of the myths surrounding chocolate, and will help us understand the subjectivity of taste, flavour profiles, myths around cacao percentage, and all supported with some on the spot tastings to help demonstrate those points J
Sally will then go on to talk about her background and the company history before explaining the production process and how an understanding of the science is vital to the artisan maker; e.g. how it can go wrong! Finally she will end talking about her customers and chocolate buyers in general and the challenges involved which will bring us back full circle to floavour profiles
NB There will be a £5.00 charge to offset the cost of a buffet meal with drinks after the lecture at approximately 2030
