IFST Lecture 2012: Food for a fitter future - consumer choice or industry responsibility?

Introduction
Eating is a voluntary behaviour – should consumers take full responsibility for their diet, or are they so dependent on a food supply chain which puts profit before health that it's impossible to eat well? Conversely, is the food industry willing to meet the desires of consumers, but a demand for healthy foods is not expressed at the point of purchase? Who should take the lead in improving the nation's health?
